One of the hardest things I have tried to adjust to since working for Studio Sixty is not having a real weekend. The rhythm of Friday night rolling into Sunday of rest and relaxation has been ingrained into me since I started working a long, long time ago. The life of a wedding photographer means late nights meeting clients and all weekend weddings so no real weekend socialising is something this former 9 to fiver has found difficult to come to terms with.
Lucky we are friends with a lot of photographers, so Sunday night is often the time we catch up and relax. Pizza, wine and good times – what a better way to start the week.
A lot of people are scared of making dough – all that yeast and rising can spook even the most adventurous cook. However I have a fail safe recipe for pizza dough that is easy as – just make sure you find a nice warm place for the dough to rise and don’t shorten the kneading time!
Pizza Dough
4 cups plain flour
1 x 7 gram sachet of yeast
2 teaspoons of salt
1 teaspoon of sugar
1 1/4 cups of water – lukewarm about the temperature of your body
1 tablespoon of olive oil
Mix the dry ingredients into a bowl and add the water and oil. Mix until most of the flour is incorporated and then use your hands to work it into a soft dough. Knead dough for 10 minutes (this will really work your arms especially your triceps!) Turn the dough into a oiled bowl and place cling film over it. Let rise for about 1 hour or until it is double in size. Punch down the dough and knead for about a minute. Cut into four equal pieces and roll out ready for your favourite topping. You can also freeze these at this stage and in the morning before work pull one out and leave it in the fridge during the day. It will be perfect and ready to be rolled out once you get home.
